The origins of the culinary fusion, known as Nikkei cuisine, date back over 100 years. In late eighteen-hundreds, nearly 7,000 Japanese traveled to Peru and upon arrival, they began cooking Japanese food with the Peruvian ingredients that were available to them, creating dishes that married the simplicity and precision of Japanese culinary techniques with the Andean tubers, chilies, and fresh seafood of Peru.

The word Omakase [お任せ] literally means “I leave it to your care” and it is a vote of confidence between the client and the chef who is responsible for choosing all the prepared recipes.  By saying that word Omakase you are entrusting your meal to the chef.
